Japan exports over $800 million of Mollusks annually – scallops, octopus, oysters, and more.
The best scallops I've ever consumed were in Tokyo, at a one of those sushi places where they send your food by model train.
Whereas I'm used to scallops cooked in bacon, butter, and other culinary cheat codes... the Japanese scallop had no frills, but was leagues ahead of any other scallop I've tasted.
Later, I come to find out that "Japan is at the top of the Mollusk food chain." In fact, mollusks are the number one exported animal product from Japan – including scallops, oysters, octopus, and other mollusk.
And you'd be surprised to find out how many street foods revolve around mollusk...
