Last week in Japan, cabbage prices soared to ¥553 per kilogram, which is 3.37 times the usual rate. This spike is due to a drop in harvest volume caused by unpredictable weather, including high summer temps and long, rainy spells without enough sunshine. A ministry official predicted that high prices are here to stay for a while.
The price crunch is hitting the market hard. Salad Club reduced the shredded cabbage in their salads from 120 grams to 100 grams per bag because of supply issues. Supermarket head Yozo Niizuma noted that the retail prices won’t dip easily. Moreover, people are changing their cooking habits—searches for cabbage hot pot recipes have decreased, while interest in hakusai and stable veggies like bean sprouts and mushrooms is on the rise.
